Creamy Coconut Panna Cotta With Fresh Strawberries

Hi darlings. I’m very excited to share my creamy coconut panna cotta, with you today. It’s quick and easy to make, has a smooth, creamy texture, and is packed with fresh strawberry squares. Yum! Plus, it’s dairy free, and perfectly infused with vanilla! Can it get any better?

It’s also only 6 ingredients! And literally takes 10 minutes to make. This divine panna cotta has me missing Italy already! What a beautiful country with such warm, lovely people!

If you haven’t already guessed it, the hubby and I have recently returned from an enchanting vacation in Italy. Lots of fantastic Italian food, wine and breath taking views! So, I decided to make, and share, a vegan version of one of their finest Italian desserts.

What You’ll Need

Makes 4 irresistible vegan panna cotta delights

  • 3 cups of Coconut Cream
  • 3 Tablespoons of Organic Cane Sugar
  • 4 Tablespoons of Corn starch
  • 3 Teaspoons of Vanilla Extract
  • 10 Fresh Strawberries
  • 1/8 cup of Pistachios

Instructions

1. First, place the corn starch in a small bowl along with 8 tablespoons of the coconut cream, and mix well until combined.

2. Next, heat the remaining coconut cream or half coconut cream, half coconut milk, in a pot, along with the sugar and vanilla extract.

3. When our coconut panna cotta mixture comes to a boil, add the corn starch mixture, and constantly stir for a couple of minutes. Notice that the mixture will start to thicken, perfect!

4. Take the cream off the heat, and continue mixing for an extra minute. If you notice any lumps that have formed, simply blend it, until smooth.

5. Next, carefully pour, or pipe, into your serving cups, and transfer to the fridge for an hour, to set.

6. To lightly toast the pistachios, simply pop them into a preheated oven at 356 degrees F (180 C) until they start to lightly brown, around 5 minutes. When ready, take them out to completely cool, then roughly chop them.

Let’s Assemble Our Creamy Coconut Panna Cotta

1. Wash and dry the strawberries, then cut them into small squares.

2. Finally, take the chilled panna cotta cups out of the fridge, and decorate with strawberries, and the lightly toasted, chopped pistachios. What are you waiting for?
